If you didn't know, McCall is a top destination in the Pacific Northwest for high-altitude thrills. With an average snowfall of 138 inches in McCall and over 300 inches on nearby Brundage Mountain, there's plenty of snow to enjoy. Here's a little secret: National Geographic has named McCall one of North America's Best Secret Ski Towns. But let’s keep that between us!

One of the most remarkable features that sets Brundage apart is its incredible snow quality. As John puts it, "The snow at Brundage really is an unexpected treasure." The difference is noticeable; it feels more like gliding rather than trudging through snow. Unlike the heavy, wet snow often found at other ski resorts across the country, our local snow is light and dry, making it fun, forgiving, and easy to ski. 

For those seeking a challenge, McCall's forested terrain offers opportunities for intermediate and experienced skiers to experience glade skiing. Navigate through the trees, discover hidden pockets of powder, and enjoy bursts of excitement throughout the day. 

Us vs Them

Unlike Aspen, Colorado, and other famous ski resorts, McCall allows you to jump straight into the action. Forget about waiting 15 minutes or more in line; "Even when it's a busy weekend, the lines are really short. I think the longest wait last year was three minutes," said John. This means you can spend more time experiencing the exhilarating thrills of downhill skiing and less time waiting around. 

And you have multiple runs to choose from based on your skill level and expertise. One recommendation, especially on a clear bluebird day, is to try the Lakeview Bowl. "If I had to pick one run to ski for the rest of the season, it would be the Lakeview Lift. It's popular with the locals. It has a nice pitch and is a long run that goes from one side of the ravine to the other, offering stunning views of Payette Lake and the charming town of McCall. I usually have the biggest smile when I finish that run."

Many are drawn to the natural gems of Idaho for winter thrills. While skiing is a popular draw, the secluded beauty of the backcountry offers a unique allure for those searching for something more. Something off the beaten path…literally. For that, we know the perfect excursion; Burgdorf Hot Springs. Count on the Shore Lodge team to provide a curated list of local vendors to guide you to a uniquely McCall experience. It's not often that you're presented with this once-in-a-lifetime experience. Only accessible by snowmobile during the winter, pack your snowmobile suit and your swimsuit for a journey unlike any other.

From McCall to Burgdorf Hot Springs, you'll traverse approximately 25 miles of breathtaking scenery through Payette National Forest. Winding paths through the surrounding mountains make for an unforgettable ride. Upon arriving at Burgdorf, you will feel like you are stepping back in time. A simpler time when the great outdoors was the mainstay of life, and your only focus was on the present. At the heart of it all lies the three log-lined pools everyone ventured into the backcountry to reach. The two smaller pools at the source of the spring fluctuate and reach around 113°F. Some like it hot, and these smaller pools indeed deliver. The larger pool averages between 100-113°F and is ready to accommodate the entire family, complete with a shallower area in one of the corners. For those who want the full experience of living off the grid, multiple cabins are available for overnight accommodations, albeit quite spartan (there is no electricity or running water, and you need to bring your own bedding).

The dressing rooms are conveniently located poolside, allowing you to transition easily from winter gear to swimsuit. Lockers are available for you to store your items (as long as you bring your own lock). With a two-hour soak time available only per reservation, make it a family expedition to explore the hidden gems Idaho is known for. "The last family I took to a snowmobile vendor in town included a dad, a son, and his best friend. They were from Georgia. It was something completely different for them and extremely fun," John recalls.

Embracing the Chill

When talking about winter in McCall, we must include McCall's famed Winter Carnival. Inspired by the Payette Lake Winter Games, which first occurred in 1924, the McCall Winter Carnival celebrates all things winter. Featuring unique events during its 10-day format, including grand ice sculptures, the famed Mardi Gras Parade, and fireworks over a frozen Payette Lake, John helped break down his top two must-see events if you're in town from January 30 - February 8, 2026.

Without a doubt, the Mardi Gras Parade is a must-see. "The carnival parade is super fun," John shared, describing it as "a slice of Americana." Whether you're participating in the parade, swimming in the sea of cheering people, or simply witnessing the community's creative interpretation of the carnival’s theme, the excitement in the air is palpable. From the local high school band playing on the back of a flatbed truck to locals dressing up their four-legged companions, it's a genuinely joyful spectacle that captures the spirit of the community.

Aside from the Mardi Gras Parade, the ice sculptures created by various businesses throughout the town are a sight to behold. However, John prefers a different approach to experiencing these wintery works of art. Instead of strolling by the streetside locations once the carnival has kicked off, he previews the work the night before judging. He'll wander through town to observe the ice sculptors working in 12° weather—sometimes amid falling snow and the dark of night—to perfect the final details of their sculptures. "Something is fascinating about witnessing one sculptor building an ice sculpture while jamming to Led Zeppelin and then walking further down the street to see another artist refining final details while listening to Taylor Swift," John said. It's spellbinding to witness these talented artists at work and genuinely appreciate what they have accomplished amidst the solace and splendor of a February night in McCall.

Winter Warm Up

Idaho may be famous for potatoes, but it is only a fraction of the incredible food from the Gem State. Our core philosophy has always been to source as many of our ingredients locally to provide you with the most remarkable dining experience, and this season was no exception. But we had some changes to make.

A change in season is the perfect time to refresh our food and cocktail menus. It's time to serve some warm, rich, and comforting dishes to keep you nice and toasty during those cool winter days. So, we sat down with our Executive Chef Marcus Stewart and Beverage Program Manager Cory Strobaugh, our in-house sommelier, to explore the new exciting options that celebrate the flavors of the Pacific Northwest. 

Executive Chef Marcus said it best: "When it's nice and cold outside, you definitely want something heartier and more substantial. " That's precisely the inspiration behind our new menus at The Cutwater on Payette Lake and The Narrows Steakhouse.  

In line with the seasonal changes in Idaho, we created a Mediterranean and Pacific Northwest fusion menu at The Cutwater on Payette Lake. Staying true to our region as well as the theme of the restaurant, Chef Marcus and his culinary team are eager to introduce a standout menu item, Bison Bolognese. "This dish is one of my favorites just because of that wonderful flavor that you get. And the fact that we were able to do the bison cut gives it just a little bit more of a unique gastronomic experience," Marcus explains. Served with pappardelle pasta, Parmesan, and garlic bread, this hearty dish is exactly what one seeks on a cool winter evening.

While traditional Osso Buco is made from cow shank, we had to add a Shore Lodge twist. "This dish is one of my favorites because of that wonderful flavor. And the fact that we could do the bison cut gives it more of a unique gastronomic experience," Marcus explains. The dish is served with a butternut squash polenta, crispy maitake mushrooms, and rainbow carrots to make it even more special. This hearty dish is precisely what one should seek to warm up a fantastic winter evening. 

The Narrows Steakhouse also remains committed to showcasing exceptional regional vendors, with the experience elegantly framed by the ancient Payette Lake. Here, you'll find remarkable signature dishes, like Bison Short Rib Ravioli from the nearby Snake River Farms, where true ranch-to-table is a way of life.

This hearty filling is served with pumpkin ravioli, pickled mustard seeds, mushroom marsala, and mascarpone. Are you in the mood for something creamy and rich? Our Mushroom Bisque is the perfect accompanying side dish, featuring truffle mascarpone, maitake mushrooms, and agrumato oil.

What pairs perfectly with this incredible winter fare? How about a stellar cocktail to warm you up. Leaving behind summer's fruity and bright flavors, The Bar's new seasonal lineup of libations features fun, creative flavor profiles that are rich and herbaceous. "Typically, what drives our development of these cocktails is asking ourselves: What would I want to drink after skiing in the mountains? That's where we develop those hot drinks," says Beverage Program Manager Cory Strobaugh.

Even at The Bar, our core local sourcing philosophy remains foundational. "Several flavor profiles that we're playing with new this year include a local organic entrepreneur, Joe Howard, who used to bartend with us many years ago. I've stayed in contact with him, and he and his wife started a cocktail syrup company called Sweet Water Syrups," noted Cory. Their Sweet Water Vanilla Cardamom Syrup makes its debut in our standout cocktail of the season, the Rum Espresso.

If you've spent even 10 minutes scrolling through Instagram on a Friday night, you're likely familiar with the Espresso Martini. While not new to the cocktail scene, they’re the latest rave. And we totally understand why. But at Shore Lodge, we don't follow trends; we like to start them. "An Espresso Martini already has notoriety. People already know and are familiar with it, so we thought it would be intriguing to utilize dark rum," Cory explains. "You'll see a lot of traditional cocktails here that we've given our spin on. I love classic cocktails, but I like making classic cocktails that belong to us, and I think we've got an incredible lineup this season."  

Each of our new libations has a hidden twist, even our famed Shore Fashioned, which never fails to make its annual debut. After all, how could we not bring this timeless cocktail back? However, our creative mixology team decided to shake things up this year (pun intended). Unlike most years where we use Knob Creek 9-Year-Old Bourbon Whiskey, this year, we're serving our Shore Fashioned with a unique Knob Creek Private Barrel Bourbon hand-selected by our panel of bourbon tasters. "The bourbon is rich, intense, and dense, with caramel and banana peel notes. It makes for a phenomenal Shore Fashioned, and this new barrel makes this a must-do signature drink," Cory states.  

What makes our standout cocktails unique is the collaborative effort with our bartenders, empowering them to propose their ideas and creations. "It's usually a joint effort among the entire team. It's not just me. Empowering the bartender team gives them a sense of ownership over the whole program, which fosters pride in their work. It may seem small, but it's crucial to building a strong team. After all, they are the pros!" said Cory.

The earthy components of this wine complement the flavors of pappardelle pasta, Parmesan, and garlic bread, creating a harmonious pairing. Plus, the lighter weight of the wine and milder flavor of the Bison will match beautifully.

Presented with rice pilaf, asparagus, and lemon confit Cajun shrimp butter, the wine's high acidity will cut through the rice pilaf's richness and the shrimp's lemon aspect. The bitterness of the asparagus contrasts with the wine's slightly sweet notes.

Curry Braised Wagyu Short Rib & ‘22 Convergence 46, Rosé, WA

One of our favorite dishes, the ginger rice grits and the fattiness of the short rib call for acidity and structure in a wine. Huston Vineyards does just the job. The Grenache grapes used create searing acidity and a powerful structure to combat the fattiness in the dish.

Extremely mineral driven, this white wine is blazing with acidity to cut through the creaminess of the scallops and compliment the earthy flavors.
